I had my gall bladder removed 20 years ago. i can eat happily, but i do need a loo often, i had no option the pain i was having, i suffer wind, bloatedness, and i still cannot digest certain foods, so i avoid them, but i do eat fruit veg, seeds nuts oily fish, cheese low fat milk probiotic yogurts the odd treat is chocolate, all these foods do help, so does drinking water, tepid, with honey slice of lemon.
