When I attended, the sign said it is current medical advice not to provide water for blood tests at any stage of the process.

I believe this to be factually incorrect - just say that they are too busy to provide water!

My name is Kath and I am the Phlebotomy Manager for Ninewells Hospital. Please accept my apologies for the delay in response and thank you for your valuable feedback. The clinical advice provided to the department is that water should not be offered to patients at any stage of the venepuncture procedure. We acknowledge that our department can have a rapid turnover but would like to assure you that although we may appear busy it is important to us that we take the time to respond to individual patient needs and apologise if this was not your experience during your recent visit.
